Pineapple Salsa

So one of my good friends is now officially overdue. She went to the GP today who said she'd book her for an induction but when she called she was told the first date was 19 days away in March--she wasn't pleased. Luckily they've phoned back to give her an induction date for a week tomorrow but in that in-between time I came up with a recipe to try and help her along.


Since old wives' tales suggest spicy food and fresh pineapple can help start labour I got the idea in my head to make a pineapple salsa.  First off you should know I don't like spicy food, I'm allergic to coriander/cilantro and I've never made salsa in my life. Also I ran into the grocery with no phone signal so couldn't even look online for a sample recipe.


What I made I think actually turned out pretty well. She didn't get to try it (fingers crossed she's on her way to hospital now) but both Blondie Boy and I chowed down on some earlier.


Blondie's Pineapple Salsa







1 red onion (finely chopped)
1 fresh pineapple (cored & finely chopped)
1 bunch of fresh mint (again finely chopped)
zest & juice of one lime
1 red chilli (deseeded & finely chopped)


Mix, chill & serve with tortilla chips.




You could add more chillies if you like it hotter and sub out mint for coriander/cilantro but I really like the extra dimension it added to the salsa. You'll notice in my ingredients picture I have mango; I was going to add that in originally but opted not to do so.


Have you ever randomly thrown something together on a whim and found a new taste sensation? Am I silly to be proud of myself?

She's still pregnant but induction scheduled the 28th. I discovered I've got an allergy to pineapple skin--who knew?

Oh it totally is! Only the core (the part you bin) contains bromelain and even that doesn't bring on labour. But seriously yo the salsa is a taste sensation!

It really is an old wives tale - I had a pineapple a day every day from week 38 onwards. Amy was 10 days overdue ;) But the pineapple was still yummy...

That is essentially what we in Trinidad call pineapple chow except we'd do it without the onion and with lots of garlic. I hope your friend got away without needing to be induced in the end. Inductions suck.

I actually make alot of food on a whim! When I watch a cooking show I get very creative. Recently, I made tilapia with tomato and scallions on top. I mixed lemon juice, mayo and seasoning and put that on the tilapia while it baked. It was vet simple and good! I also get creative when I have leftovers. I made pasta and added diced canned tomatoes and fresh veggies. I cooked the veggies and heated the tomatoes, then tossed the pasta in! It was a nice change instead of a red sauce. Try it!
