85 Calorie Double Chocolate Muffins

               DOUBLE CHOCOLATE MUFFINS UNDER 100 CALORIES!!!!
Delicious and low calorie chocolate muffins
Ok, yes I'm yelling and yes I've disappeared for a wee bit. A lot has happened and gone on since I've last posted, including me eating healthier. Today I adapted Chelsea's Messy Apron's recipe and made these amazing double chocolate muffins and they are TOO amazing not to share. They are only 85 calories each AND gluten free!
Double Chocolate Mini Muffins
  • 1/2 cup, Cocoa powder
  • 1 tsp, baking soda
  • 1/2 tsp, baking powder
  • 1/2 teaspoon, Salt
  • 2 tbsp(s), Dark Brown Sugar
  • 2 tbsp(s), Splenda

  • 1/2 cup, Jif- Creamy Peanut Butter
  • 1/2 cup, Unsweetened Applesauce
  • 1/2cup, Vanilla Greek Yogurt
  • 2 tsp, Vanilla extract
  • 2 tbsp, Honey
  • 2 large, Eggs
  • 4 tbsp(s), Home ground Oat Flour 
  • 7 tbsp, Semi Sweet Chocolate Baking Chips (reserve 2 tbsp)











Instructions
  1. Preheat the oven to 350 F. Spray a 24 count mini muffin tin with non-stick spray. Do not use muffin liners! The muffins won't come out well.
  2. In a large bowl, stir together the  dry ingredients: cocoa powder, oat flour (blend GF oats until they are a flour consistency. Make sure to measure the oats AFTER being blended), baking soda, baking powder, salt, brown sugar and splenda.
  3. In a separate bowl, combine peanut butter, applesauce, Greek yogurt, vanilla, and honey. Beat until completely combined.
  4. Slowly add in the dry to the wet ingredients and mix until just combined.
  5. Add the egg and combine until incorporated.
  6. Stir in 5 Tbsp of chocolate chips and distribute the batter evenly across the muffin tin.
  7. Top the muffins with the remaining 2 Tbsp of chocolate chips.
  8. Bake for 18-22 minutes (my oven took 20) or until a toothpick inserted in the center comes out clean.
  9. Let muffins cool 3-4 minutes, or until cool to touch and remove from pan to finish cooling.
  10. Try not to eat them all while they are still ooey-gooey melty and warm.

Honestly these were so good AND my kids loved them. They taste super indulgent (like lava cake Blondie Boy said) and are only 85 calories each! I really don't think you can get much better with a  low calorie dessert! Full nutritional information below!

The Three F's

I've got the three F's: funky, fat and fed up. I could have probably added in fucked off but y'all didn't need to know what a potty mouth I really have if you don't already.


Funk. I'm in a funk. I wish I could elaborate more than that but that's it. I'm just in a weird funky mood and can't get out of it. If you wanted to label me as depressed that could probably work but as in the past my personal depression/anxiety has manifested much worse I'm not going to call it that.


Fat. Yes I'm fat. Now don't start in on me here because everyone's definition of fat is different but I'm up a jeans size. I've mentioned before how I own jeans in varying sizes from 10-18 and right now that is a good thing because I'm not fitting in the ones I *should* be. I'm not liking how things fit on me and I'm feeling heavy so I need to get off my fat ass and do something about it. The gym is literally a one minute drive away so I just need to do it already.  I also need to stop eating like an idiot and eat healthily. Of course I bought a box of Betty Crocker Angel Food mix at TK Maxx today because I could so I'm obviously not in that big of a rush. I'm going to need to be in a swimsuit in two weeks so I should start sooner than later.


Fed up. I could have also called this bit Friendless. Extreme? Eh not so much. The not so glamorous side of being an expat (what is the glam side again?) is that all your friends are thousands of miles and an ocean away. I desperately miss my friends to the point where I'm a sad sack thinking about it and crying while I type. I love my friends. They are ride or die, amazing friends who love me not despite all my eccentricities but for them. I don't have to explain myself or act a certain way I can just be me. I miss them to the point that I ridiculously and incorrectly begin to resent NotBlondeHusband for having friends that he can go out and do things with regularly. Homesickness is something all expats have to deal with from time to time and I'm some what crushed with it at the moment.


So yea. I've got the F's. I honestly don't really know what to do about it. I've started stripping the pink out of my hair but I'm not really sure how that will affect anything. I've recognized that I need to get healthy but I haven't done anything about it so not much there.  Friends well what can I do; it isn't like I'm some introverted, shy person who doesn't like to meet new people---I'm precisely the opposite. But now I'm just whining and I hate whining.


 So why did I write this? I don't know. Maybe if I get it out of my head it is a step closer to breaking out of it.

Handle with Care

I love a good care package, especially one with American treats in it and I was lucky enough to get two recently! Blondie Boy and I got an awesome package from his Mimi Linda with a microphone, Little People Plane and Paul Frank monkey tshirt for him and Girl Scout Cookies and Peeps for NotBlondeHusband and I! If you don't know what Girl Scout Cookies are you are seriously missing out. I'll be calculating the Weight Watchers Pro-Points for these tonight that is for sure :)

Before I left for London last Friday I got an awesome package of Sugar-Free Goodies from the Appliances Online, who sell cookers and other appliances, Fairy HobMother! They wanted to send me a wee treat, but knew I was doing well on Weight Watchers and didn't want to mess that up so they got me a selection of treats from the Sugar Free Megastore! Most of the snacks are American so I was super excited! I got creme filled cupcakes, snack bars, licorice, chocolate mints--YUM!

If I were a boy

You've heard me talk about NotBlondeHusband, but now he's joining me here and will be posting from his point of view! So please be nice to him and show him some love on his first post!

Let's start with a confession: I'm a dude and I need to diet.

There's some stigma attached to the statement. Diets are for girls. It's "girly", particularly in the UK, to go for a drink with the lads and to pick a light beer or a glass of wine or a spirit with a diet mixer over a pint of your usual or a spirit and "full fat" mixer. If you grab food of course you grab the biggest burger or kebab you can find, why would you ever order chicken or a salad?

I've slowly been gaining weight over the last 10 years, over the last two years I've gained 20+ lbs. While I still play football once a week, it's been longer than that decade since I was playing proper competitive sports and burning all the excess calories that a typical "lad's diet" gives you. I'm generally not very good at moderation. If I feel like a bar of chocolate, I'll have it; of course regular Coke tastes better than diet crap, so I'll have that too; that salad is never going to come close to that burger, so it's not really a choice. Blondie and I are also terrible influences on each other. Both had a long day and don't feel like a trip to the shops? There's nothing wrong with a third takeaway in a week then...

Unfortunately, I've finally realised that I'm not at the age my body can handle that anymore, so it's time to try the alternative. Which is where Weight Watchers comes in.
Two weeks ago if you'd asked me my opinion of WW I'd have probably told you it was a bunch of overweight, middle-aged women sitting in a church hall commiserating each other when they put on a couple of ounces a week, calculators out ready to work out the calorific content of that rice cake they're holding. Not really my scene, and not something I could see fitting in the diary of a busy person. As it turns out, I wasn't even close.

Meetings are optional, you can manage your diet entirely online. If you need support, there are forums. If like me, you don't have time for that and just want to spend 5 minutes a day planning your diet you can. Want to eat from meal plans, that's fine. If like me you like to cook your own food the recipe builder lets you work out what your favourite recipes cost you and you can adapt and update them with lower cost alternatives. You can even search for recipes online and edit them to swap out ingredients you're not so fond of.

There is an element of point counting but it isn't really an onerous task. Weight Watchers own products have pro point values attached. Anything else you stick into a database and it tells you exactly what it costs you. You have your daily allowance but you also get extra pro points for "treats" throughout the week. I don't know what kind of things women use this for, but at 3 pro points a bottled beer or 6 pro points for a pint of lager it's more than enough for one decent night out at the pub a week.

So what has this meant for me? There's no point sugar coating it, to begin with I was hungry. I don't think there is a weight loss diet where you're not hungry to start. I was overeating before so obviously eating a normal amount felt like not enough to begin with. Two weeks in this isn't an issue any more. I eat a bowl of cereal for my breakfast instead of some junk and try to snack on fruit and veg. I can even still have a bag of crisps as a snack. Lunch is usually a healthy sandwich or something I can eat on the go. Dinner can be relatively normal. Last night I even got burgers. My biggest concession is cutting down on sugary drinks but I've even managed that. Watching the football midweek is pretty much the same without the two or three beers that I would sometimes have.

It is frustrating sometimes. I would kill for a pizza right now and the low point equivalents to that just don't cut the mustard. When I'm out and about it would be easier to grab the first thing to hand rather than think about what you're allowed but the iPhone app lets you check exactly how much that takeaway sandwich will cost you. So far, at the end of the week it's been worth it. After two weeks I've already lost over 5% of my body weight. I don't mind a little frustration when the results are so obvious. I've still a bit to go but I'm definitely sticking with it.

We still manage to eat pretty well. I'll stick up some examples of meals as we go along.

If my jeans could talk, would I be embarrassed?

See those? That's Old Navy The Flirt Boot Cut Dark Wash Jeans; I own 5 pairs (not counting my ON Maternity Jeans) in 5 different sizes. In the past three years I've been all 5 sizes. Fall of 2007 I decided to try the South Beach diet and that combined with exercise meant I lost over 50lbs. Then we got married, I changed jobs and quit my gym, got pregnant had a baby and got fat all over again.

I blogged about putting back on a stone (14lbs) two years ago and to be honest I had totally healthy weight gain while pregnant with Blondie Boy (I had one hell of a bump) so I have no one to blame but myself.

I've been happy in all those jean sizes except the last one, that nasty US 18.

I was happy as a US 16 before I lost any weight, but now I'm back in those 16's again, but it's not the same. I feel heavier, tired and unmotivated. I went out in fairly tight tops and short skirts before but not a chance now. My stomach was sliced open and I don't have a muffin top, I have a muffin spill over. I don't begrudge having my emergency section one second, but I can't deny that it's left my body a different shape than it was before.


Don't get me wrong I love my curves. I love having an hourglass figure and I will never be one of those skinny girls, but I also know I'm not this girl I am now either. This isn't my body and I'm not me. I'm not carrying this weight in a healthy way and it's not good for anyone.

I'm so picky and careful about what Blondie Boy eats. I try to make sure everything is organic, home made, no sugar, low fat and low salt. He drinks nothing but water or formula and lots of fruits and veggies. I eat crap.

I'm a hypocrite! While I'm feeding my son meticulously, I'm drinking an Irn-Bru and eating a Gregg's chocolate covered donut. I want to set a good example for Blondie Boy and while I know he isn't absorbing my unhealthy eating now I don't want to be a hypocrite.

So I'm calling myself out. I'm calling myself a fatty boom batty, lazy, unhealthy hypocrite and I'm going to do something about it. I'm tired of sucking it in, turning my hips and bending my knee in photos to make myself look slimmer. I'm tired of dreading the thought of wearing anything out of the house other than sweats. I'm tired of not feeling like myself in my own body.

So that's that and I'm going to something about it and so is NotBlondeHusband for that matter. We both are going to eat healthier and be healthier not just for ourselves, but for our son.

My baby sister is getting married this October and all of us are the in wedding. I think ten months is a fairly healthy timeline for getting in shape and getting healthier--don't you?

And you lucky people get to cheer us on the whole way, or at least I hope you'll cheer us on? Will you be our cheerleaders....please?
